Green Cardamom Pods

The little seeds in the green pods are very flavoursome and floral; green cardamom can be used in sweet and savoury dishes. To ensure you don’t get a whole one in your mouth, puncture the pod and remove all the seeds. Use the seeds and husk in your curries and just the seeds in desserts and cakes.
